Quoc Son Tran's restaurant, named after his hometown Hanoi, is located in the heart of Welheiden in Kassel.

 

His style attaches great importance to freshness: He uses glass and rice noodles and lots of fresh vegetables.

He deliberately does not use the flavor enhancer glutamate, but he has no objection to fish sauce and a little sugar for seasoning. 

The ambience of the restaurant is modern and minimalist, while at the same time incorporating traditional Vietnamese elements such as fans and raffia mats.
